I guarantee every single member of your family (even the most dedicated carnivore) is going to love this. With all those vegetables it has VOLUME . . . and we just love that. Fibre = filling! Plus, swapping the basmati rice for brown rice would add extra fibre.

1 tbsp olive oil

1 onion, diced

2 sticks celery, diced

1 carrot, peeled and diced

2 tsp chilli powder (more if wished)

75g red lentils

100g puy lentils, cooked

400g can kidney beans, drained and rinsed

75g sweetcorn

400g can chopped tomatoes

400ml vegetable stock

275g basmati rice

2 tbsp chopped flatleaf parsley

2 tbsp flaked almonds, toasted

lime wedges, to serve

salt and freshly ground black pepper
